The best papayas are definitely grown in Hawaii. When they are ripe, they are so sweet!
I picked up a few Kahuku grown papayas at the farmer’s market. The orange flesh ones are great, but I really love the red flesh ones called Red Papayas. Both kinds have orange and green flecked outer skins. The Red Papayas just seem to taste especially sweet to me.
Full of vitamins and enzymes, they are great for your digestion.
I like to whisk some grated lime zest, grated fresh ginger root, and honey into some greek yogurt, then layer it with diced papayas and granola.
Adding ginger and yogurt too? Talk about a probiotic digestion wonder!
A great way to start off the day, and even better after a hot day running around or at the beach. =)
- 3 c. diced fresh ripe papaya
- Juice of half a lime
- 6 oz. plain nonfat greek yogurt
- 1 tsp. finely grated lime zest
- ¼ to ½ tsp. finely grated fresh ginger root
- 1-2 tsp. honey or sugar
- ¼ c. granola
- Squeeze lime juice over diced papaya. Mix gently and set aside.
- In a small bowl, whisk together yogurt, lime zest, ginger and honey.
- In each of two glasses, layer ¼th of papaya, ½ of yogurt, ¼th of papaya. Top each glass with 2 T. granola.
- Serve well chilled.
