Papaya Parfaits with Ginger Lime Greek Yogurt

A refreshing fruit and yogurt parfait.
  • 3 c. diced fresh ripe papaya
  • Juice of half a lime
  • 6 oz. plain nonfat greek yogurt
  • 1 tsp. finely grated lime zest
  • ¼ to ½ tsp. finely grated fresh ginger root
  • 1-2 tsp. honey or sugar
  • ¼ c. granola
  1. Squeeze lime juice over diced papaya. Mix gently and set aside.
  2. In a small bowl, whisk together yogurt, lime zest, ginger and honey.
  3. In each of two glasses, layer ¼th of papaya, ½ of yogurt, ¼th of papaya. Top each glass with 2 T. granola.
  4. Serve well chilled.
