Here’s something to hit that sweet and sour craving.
My csa boxes have been filled with cabbages for many months now, and this easy recipe I came up with has become an addicting favorite.
Equally good with red or green cabbages.
Slice cabbage and bacon into 1/4″ strips.
Fry bacon until it is about halfway done.
Now mix in all the cabbage.
Add apple cider vinegar (the sour) and apple juice (the sweet). Stir it all up.
Cover it and cook 15 to 20 minutes, lifting up the lid to stir occasionally.
Cook until all the liquid has mostly evaporated, and the cabbage is tender. If you like your cabbage softer, keep adding little water and cooking until it is as soft as you desire.
Forget the corned beef and potatoes tomorrow–here’s my pot of gold!

- 6 c. sliced cabbage, ¼" strips (approx. 1 small cabbage)
- 6 oz. good quality uncured bacon, cut crosswise into ¼" strips
- ¼ c. apple cider vinegar
- 1 c. apple juice
- Cook bacon in frying pan on medium high heat until it is about half done.
- Mix in cabbage, vinegar and apple juice. Cover and cook 15-20 minutes, lifting the lid to stir occasionally, until the liquid has mostly evaporated and the cabbage is tender. If a softer cabbage is desired, keep adding a little water at a time and cooking until the cabbage is as soft as desired.
