I recently needed to come up with an easy open faced, vegetarian sandwich to include in a tea tray I was preparing for my daughter’s birthday tea.

The other finger sandwiches I made were smoked salmon, chicken salad, and egg salad.

Wouldn’t you know it? This one turned out to be the most popular, and it was the least labor intensive.

I started out with these brioche toasts from Trader Joe’s. Melba toast, crackers, or homemade toast would do too.

An easy gluten free fix would be to use gluten free crackers or gluten free toast.

Simply spread a little hummus on each toast, top with chopped veggies. Cucumbers and tomatoes were the easiest for me, but next time I may add some sliced olives and sliced mini bell peppers to the mix. A squeeze of fresh lemon juice or splash of vinegar to the vegetables is nice too.  Drizzle with some good olive oil, and a grind of pepper on top.

Good quality olive oil does make a difference, and I used Basil Olive Oil from the Chef’s Olive Mix. I love their wild mushroom and sage oil olive, and probably would have used it, but I was out that day.

When the requests came in for more, they were a cinch to make. These would make a nice tray of appetizers, especially with some different combinations of vegetables and olive oils.

Quick Hummus and Vegetable Toasts

Ingredients
  • Brioche toast, melba toast, crackers
  • Hummus
  • Chopped fresh vegetables like cucumbers, tomatoes, bell peppers, olives
  • Fresh lemon juice or vinegar (optional)
  • Good quality olive oil
  • Freshly ground black pepper
Instructions
  1. Spread hummus on toast pieces.
  2. Scatter chopped vegetables over hummus. Add a few drops of lemon juice or vinegar if desired.
  3. Drizzle with olive oil.
  4. Top with freshly ground black pepper.
