Summer is slowly coming to an end~
This past month has been busy with cleaning and organizing the house, and getting Laurel ready to go off to college.
Amongst all the hustle and bustle, we’ve enjoyed simple tea trays, quickly thrown together, and savored together in the warm weather.
Smoked Salmon is always a favorite here.
Lemon zest, capers, and fresh dill mixed into cream cheese make a nice accompanying spread for the sandwiches.
A rummage of the fridge turned up roasted purple potatoes, which I diced, then added some corn and chopped red bell peppers.
A squeeze of lemon juice, drizzle of olive oil, and sprinkle of sea salt and a we had a quick side salad along with a small cluster of purple grapes.
Another favorite and delicious spread is to add orange zest and chopped dried cranberries to cream cheese.
I was glad to be able to use one of the surprisingly many oranges still on my backyard tree.
Cranberry Orange cream cheese pairs well with herb roasted turkey or chicken, and makes for some tasty little tea sandwiches.
Along with some cold, steamed green beans and cinnamon applesauce topped with candied pecans, this tray is like a summer version of Thanksgiving, and a reminder that autumn will soon be here.
What’s your favorite sandwich spread?
- 4 oz. regular or light cream cheese, softened
- 1 tsp. finely grated lemon zest
- 1-1/2 T. chopped fresh dill
- 1 T. capers, finely chopped
- Mix all ingredients together.
