Anytime I go back home to Hawaii, I love to visit the farmer’s markets to see what’s new, and to buy all the local fruits and vegetables.
Kula Strawberries and Maui Gold Pineapples are two must haves on Maui.
Since we were having chicken and vegetable kabobs for dinner, and I had a ton of bamboo skewers left, I decided to cut up the pineapple and some bananas and skewer them. I skewered the strawberries whole, as they looked so pretty that way.
Chocolate covered macadamia nuts– mmm…this is what happens when you have nice family and friends.
You end up having lots of them to take back home with you.
A bowl of them would go nicely alongside fresh fruit skewers…..
but hmmm…..let’s chop them all up….
…and melt them! Less than a minute in the microwave will do. Stir until all the chocolate is melted, and use a spoon to carefully spread on top of each piece of fruit.
It looked a little clunky with all the nuts, but nothing a little drizzle of white chocolate couldn’t fix.
In a pinch, all I could find were some white chocolate cookies and creme candy bars.
So I broke them up and nuked them in the microwave. Poured it all into a little ziplock baggie, snipped one corner, and drizzled away.
They turned out great! No different than eating a piece of candy with a fruit skewer, but just seemed a little nicer. Who doesn’t like chocolate covered fruit?
One kind of odd thing is that the cookie part of the cookies ‘n’ creme candy bars was actually tiny cookie spheres. So after I drizzled out as much of the white chocolate part as I could, I was left with a bunch of little cookies spheres in the bag.
Seemed like such a waste to just throw them away, so I spooned them atop a few of the skewers. Looks like cookie caviar to me!
I never saw a bunch of kids finish dinner so fast, just so they could get to the chocolate covered fruit skewers!
