Strawberry Watermelon Smoothie with Blueberries and Haupia Stars |

A refreshing smoothie perfect for the 4th of July!
- 1 c. ripe watermelon cubes
- 2 c. frozen strawberries
- 1 c. gingerale or lemon-lime soda
- Additional sugar or stevia to taste, if needed
- ¼ c. or more fresh blueberries
- Haupia Jello:
- 1-12 oz. can light coconut milk
- 2-3 T. sugar, or stevia to taste
- 2 T. unflavored gelatin
- Combine coconut milk, sugar and gelatin in a small saucepan. Whisk together and bring to a boil, stirring frequently. Pour into a 9" square or round pyrex type pan, so that the liquid is about ½" high. Chill for 2 or more hours until firm. Use a 1" cookie cutter to cut out stars.
- For the smoothie, blend watermelon, strawberries and soda in a blender until smooth. If your fruit is really sour, you may need to sweeten up a bit with some sugar or stevia. Pour into cups. Top each smoothie with blueberries and haupia stars.
- This will make approximately 16 oz. of smoothie, and you should be able to cut out 30-32 stars. I used five stars to top the cup, so there are enough stars for 6 or so glasses. If you make the smoothie recipe part two more times you will have be able to have six 8 oz. cups.
