Easy Spam Fried Rice

Ingredients
  • 2 large eggs, beaten
  • 3 c. cooked short grain rice
  • 2 T. oil
  • ½ tsp. onion powder
  • few grinds of freshly ground black pepper
  • 2 T. oyster sauce
  • 1 c. finely diced spam
  • 1 T. brown sugar or evaporated cane juice crystals
  • 1-1/2 T. lower sodium soy sauce
  • ¾ c. frozen mixed corn and peas
Instructions
  1. Spray a large non-stick frying pan with non-stick spray and place on medium-high heat. Add eggs. Scramble and cook until done. Remove to a large bowl.
  2. Heat oil in the frying pan over medium high heat. Add rice. Sprinkle with onion powder and pepper, then drizzle on oyster sauce. Stir-fry 3-4 minutes until well mixed and heated through. Remove to the bowl with the scramble eggs.
  3. Swirl sugar and soy sauce together in the frying pan and place back on medium-high heat.
  4. Add spam. Mix and fry until the liquid has mostly evaporated and the spam is browned. Stir in the corn and peas, then add the rice and eggs back in. Stir-fry 3-5 more minutes until well mixed and heated through.
  5. Note: To make spam fried rice for musubi filling, omit the eggs, and decrease the frozen corn/peas to ¼ cup.
