Lighter donut fare
Ingredients
  • 1-1/2 c. cake flour
  • ¼ c. + ¾ c. granulated sugar
  • ½ to ¾ tsp. ground nutmeg or cinnamon
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. sea salt
  • 2 T. + 2 T. melted butter
  • ½ c. buttermilk
  • 1 egg
Instructions
  1. Preheat oven to 350 degrees. Spray pans for full size donuts with non-stick spray. If using silicone pans, place them on a cookie sheet.
  2. Whisk together the flour, ¼ c. sugar, baking powder, baking soda and salt in a mixing bowl. Measure out butttermilk into a small bowl and beat in the egg and 2T. melted butter with a fork. Add this to the dry ingredients and whisk together until smooth.
  3. Place the batter into a 1 quart ziplock bag. Push the batter down into one corner. Snip off the tip to create a ½" opening. Pipe the batter into the donut molds, being careful not to overfill. The ring of dough should fill the well less than half full. Bake for 11-13 minutes until toothpick inserted comes out clean.
  4. One at a time, brush the donuts with the remaining melted butter and dip into the ¾ c. of sugar, coating them well.
  5. They taste the best when served right away.
