Sweet and Sour Cabbage with Bacon

Ingredients
  • 6 c. sliced cabbage, ¼" strips (approx. 1 small cabbage)
  • 6 oz. good quality uncured bacon, cut crosswise into ¼" strips
  • ¼ c. apple cider vinegar
  • 1 c. apple juice
Instructions
  1. Cook bacon in frying pan on medium high heat until it is about half done.
  2. Mix in cabbage, vinegar and apple juice. Cover and cook 15-20 minutes, lifting the lid to stir occasionally, until the liquid has mostly evaporated and the cabbage is tender. If a softer cabbage is desired, keep adding a little water at a time and cooking until the cabbage is as soft as desired.
